Tokaj
Located in the southwest of the Tokaj wine region, the Disznókő estate sits on a hill of volcanic clay soil with perlite pebbles: at the top of the hill is the boar-shaped rock from which the estate takes its name (Disznókő means “the rock of the wild boar”), the vineyards are arranged down the southern slope, and the winery is at the bottom. The vineyards, regarded as among the region’s finest, are protected by the cold northern winds by the Zemplén hills right behind it, and it receives light and heat from its southerly exposure. Four of the region’s approved noble grape varieties are planted in this single vineyard—Furmint, Harslevelu, Zeta, and Sagamuskotaly.
Four different plots of the Disznókő vineyard specifically destined for this dry wine were harvested and vinified separately. All the grapes were pressed directly without destemming, allowed to settle for a night, and then fermented in stainless steel vats. The wine was aged on its fine lees in stainless steel vats for three months.
